A modern closed hot water system is used to melt the crystals that have formed during storage so the honey can be creamed and packed. All incoming honey is tested and graded into five categories based on the minimum Methylglyoxal content. Methylglyoxal is a natural occurring compound found in Manuka Honey. The higher the Methylglyoxal content, the stronger the active constituents of the Manuka Honey.
