I love caramel popcorn and this recipe is so easy to make that you can easily whip it up in 5 minutes. Whether you’re craving a sweet treat or want to gift some to a friend, this is a decadent caramel popcorn. Plus, you only need 3 ingredients for this vegan caramel - yay!

Vegan Caramel Popcorn (makes 10 cups)

Ingredients:

1/4 cup organic popcorn kernels
1/2 cup coconut oil
1/2 cup maple syrup
1/3 cup coconut sugar
Directions:

Pop the popcorn kernels: Pop popcorn in an air-popper. 1/4 cup of kernels yielded 10 cups of popcorn. You can also pop the popcorn in a pot with 2 tbsp avocado oil and the lid on.
Make caramel: In a pot over medium heat, combine coconut oil, maple syrup and coconut sugar. Whisk as all ingredients combine together. Bring to a boil and cook for 3-4 minutes, whisking constantly.
Place a large sheet of parchment paper on a countertop or baking sheet (this will make it easier to coat popcorn). Pour caramel sauce over the popcorn and let cool complete (Be careful, hot caramel can burn). Enjoy!
