Ce vinaigre de xérès balsamique est fabriqué exclusivement à partir de solera Pedro Ximenez 25 ans. Il impressionne par sa consistance épaisse et sa douceur fine. Il est idéal pour affiner les sauces et les vinaigrettes. Comparé aux anciens vinaigres balsamiques majoritairement doux, il se distingue par son acidité résiduelle de 7%.
